Our unblended single cultivar organic matcha has been specially grown with Matcha in mind. This limited small batch production reflects the variations in terroir, climate and season. Matcha grown this way differ from the more usual larger scale production where a variety of Matchas are blended to control the quality.

A delicious tea with great flavour.
This is an outstanding matcha without a hint of bitterness or tannic after-bite. It is a gorgeous, vibrant emerald color. (See my photo of it in the can comparing it one ceremonial and two culinary grades. It is at the top of the photo with the silica packet.)
I used filtered--i.e. boring, tasteless--municipal water from Baltimore at 180F, and the tea still had a terrific, rich flavor. I can only imagine how heavenly it must be with actually good water.
Overall, I found it to be very smooth, and it struck a great balance between sweet and savory. I tend not to like buttery, umami notes, and this matcha didn't go there, so I particularly enjoyed it. I really like grass, vegetable, and sweet, and this harmonized everything well for my palate. This isn't, however, a particularly sweet matcha. If anything, all the tastes blend together in a lovely way.
One note: it required vigorous fining and whisking to get a good froth and eliminate lumps. However, this could be a factor of the VERY humid climate I live in, my cheap chasen, and my self-taught technique. Once I got the froth (after about 30 seconds), it was substantial and remained for a good while.
Overall, I HIGHLY recommend this matcha.
